Number of Servings: 12


    2 cups flour
    1/2 cup sugar
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1/4 tsp nutmeg
    4 tbsp buttermilk powder
    1/4 cup unsalted butter
    1 1/4 cup water
    1 large egg
    1 cup blueberries


In a mixing bowl, sift flour, baking powder, baking soda, salt, nutmeg, and buttermilk powder. Stir in sugar. Cut in butter with pastry blender until mixture resembles a coarse meal. In a small bowl or measuring cup combine water and egg and beat slightly to combine. Add to flour mixture and stir just until combined. Do not overbeat. Fold in blueberries. Using a muffin pan either sprayed with cooking spray or lined with paper liners, fill cups 3/4 full. Bake at 400 degrees for 20 minutes, or until golden brown. Cool in pan for a few minutes, then remove to a wire rack to cool completely.
