Introduction

These were invented to get that extra fiber into the day. They don't keep well, so need to be frozen, and then a quick thaw in the microwave, really yummy. Ingredients

    Oat-bran cereal, 2.25 cups
    Brown sugar, 1/4 cup
    Ground Cinnamon, i tbsp
    Baking Powder, 1 tbsp
    Raisins, 1/2 cup
    Vegetable oil, 2 tbsp
    Mashed banana, 1 cup
    Fat-fee milk, 1/4 cup
    Egg, 1 medium
    Peaches, 1x 440 g can

Directions

Mix together oat-bran, brown sugar, cinnamon, baking powder, and raisins. Put banana into food processor, add oil, milk and egg. Process till smooth. Drain peaches, retaining juice, add peaches to processor and pulse till peaches are small pieces. Stir into dry ingredients, add some of the peach juice if necessary to make a moist mix. Bake in 12 muffin tins lined with baking cups for 14 minutes at 220 degrees celsius.
