Introduction

A mix of vegetables to serve on top of pasta. A mix of vegetables to serve on top of pasta.
Number of Servings: 4

Ingredients

    1 large onion, sliced
    2 zucchini, about 300 grams, sliced
    1/3 yellow pepper (70 g), chopped
    1/3 green pepper (70), chopped
    1 tomato, cut into wedges
    1 tbsp olive oil
    1/4 water
    1 clove of garlic, crushed
    1/4 tsp Mrs. Dash or other no salt seasoning
    1/2 tsp freshly ground black pepper

Directions

Heat pan on medium high and add olive oil. Add onions and brown. Add peppers and cook for 2 -3 minutes, stirring. Add zucchini and stir. Add tomatoes and water. Cover and turn off the heat. Veggies will be done in about 3 mins. Just before serving add a crushed clove of garlic. Season with Mrs. Dash or another no salt favorite, and black pepper. Great on top of pasta, rice or mashed potatoes. Garnish with low fat cheese if desired.
Makes 4 servings.
