Finely ground Cauliflower salad with Greek olives and Mediterian herbs from Matt’s RAWvolution book

Number of Servings: 4

Ingredients

1 head (medium) cauliflower, finely ground
    1/4 cup fresh lemon juice
    1/2 cup olive oil
    1 teaspoon black pepper
    1 teaspoon sea salt
    1 bunch fresh parsley leaves
1 bunch fresh mint leaves (optional)
    1 bunch fresh cilantro leaves
    Greek olives pitted (8)

Directions

Put the cauliflower in a food processor or blender and pulse until the texture is somewhat like couscous--rough and grainy, with the bits a little larger than grits, but smaller than rice.

In the large bowl, combine all the ingredients and thoroghly mix; then refrigerate. This is important, because it allows the flavors to blend. You should leave it in there for at LEAST an hour, but six hours is better.
