    1 egg
    1 cup all-purpose flour*
    3/4 cup Lactaid fat free milk
    1/2 cup applesauce
    1 tsp. Splenda brand sweetener
    3 tsp. baking powder
    1/2 tsp salt

    *If using self-rising flour, omit baking powder and salt.


Heat griddle on medium heat, spray with no-stick cooking spray if necessary. Beat egg until fluffy, beat in remaining ingredients just until smooth.

Pour 1/4 cup of batter onto hot griddle. Cook pankcakes until bubbles form on top, turn and cook until golden brown.

Makes 8 4-inch pancakes.
