Introduction

This sauce is a "must try" with my Balsamic Marinated Pork Loin and Low-Fat Parmesan Polenta. When I plate this menu, I put a layer of polenta, then sliced pork tenderloin and this lemon-honey sauce on top. It's a fantastic meal that gets five stars from my family!

Ingredients

    Lemon-Honey Sauce (makes about a cup)
    1 tablespoon olive oil
    1/4 cup shallots, thinly sliced
    1/4 cup dry white wine
    1 sprig fresh rosemary
    1 cup chicken broth
    1/4 cup fresh lemon juice
    2 tablespoons honey
    1 tablespoons unsalted butter, cold (I don't use this, so nutritional values are not included)

Directions

1 Saute shallots in oil in a saucepan over medium heat until softened,
about 2 minutes.
2 Deglaze with wine; add rosemary and simmer until nearly all liquid
evaporates, about 3 minutes.
3 Add broth, lemon juice and honey. Simmer until reduced to 1 cup,
about 15 minutes. Remove and discard rosemary, then swirl in butter (butter is optional, and I don't use it).
