    3 eggs
    1/2 cup oil
    1/2 unsweetened applesauce
    2 cups grated zucchini (3 medium)
    2 tsp vanilla extract
    1 1/2 cup flour
    1 1/2 cup whole wheat flour
    3 tsp cinnamon
    1 tsp baking soda
    1/4 tsp baking powder
    1/2 tsp nutmeg
    1 tsp salt
    1/2 cup chopped walnuts

    1/2 cup whole wheat flour
    1/2 cup brown sugar
    1 tsp cinnamon
    1/2 tsp ground nutmeg
    2-3 tbsp butter
    1/4 cup chopped walnuts


*This takes about 15-20 min to prepare, but you may want to grate the zucchini ahead of time and drain/use paper towels to absorb excess water before adding to the batter.

Preheat oven to 325 degrees. Grease and flour 2 8x4 inch bread pans.

In a large bowl, beat eggs until light and frothy. Mix in oil, applesauce, sugar and splenda. Stir in zucchini and vanilla. Combine flours, cinnamon, nutmeg, baking soda, baking powder, salt and nuts in a separate bowl. Stir into the egg mixture.

Divide the batter between the 2 prepared pans.

For topping:

Combine all topping ingredients. Cut in butter until mixture is crumbly. Sprinkle topping on top of batter.

Bake for 60-70 minutes or until done.
