Introduction

So yummy and sweet ... you don't even need syrup!

So yummy and sweet ... you don't even need syrup!



Ingredients

    1 cup flour2 tsp baking powder1 banana, mashed1 1/4 cups soy milk1 tbsp sweetenersliced fresh fruit (garnish)

Directions

1. In a large bowl, sift the flour and baking powder together.

2. In a small bowl, mash the banana with a fork and add 1/4 cup of the milk, mixing together until there are no lumps. Add the banana, sweetener, and remaining soy milk to the dry mix and stir together until "just mixed."

3. Portion out about 3/4 to 1 cup of batter onto a hot non-stick pan or a lightly oiled frying pan and cover with a lid. Let sit on medium heat until the center starts to bubble and become sturdy. Flip pancake over and cook other side until golden brown. Repeat process until all the batter is gone.

4. Garnish with fresh fruit and maple syrup.

Makes 3 servings.

    I've made these using a VERY ripe banana, thus eliminating the sweetener. I, too, used a 50/50 whole wheat, white flour mix and instead of skim milk, ued unsweetened vanilla almond milk---40 calories a cup!
    I also added ground flax and a bit of wheat germ to super-pack these with nutrition!

    Good starter recipe even better with minor substitutions for those of us who are not soy lovers; milk, sugar, and 1/2 whole wheat 1/2 regular flour. The bananas keep these yummy griddle cakes moist & nutritious. Watch out they don't burn too quickly while cooking. - 1/16/09

    I made them with 1/2 c whole wheat flour and 1/2 c unbleached white flour, left out the sweetener and added about a tsp of cinnamon. Fantastic served with a Tbsp of apple butter on top! - 1/16/08

    I used ww pastry/spelt flour,stevia,& low sodium baking powder. I also used agave syrup because my husband is diabetic. The Hain Pure Foods makes a low sodium baking powder Featherweight is brand name.Some Safeways carry it. - 1/17/09

    DELICIOUS! I added another half of a mashed banana and banana and strawberry slices on top. These are absolutely light, fluffy, and have a wonderful subtle sweetness. YUM.
    I made about 12 pancakes (a little under a 1/4 cup per pancake). 2-3 ended up being more than enough per person.

    Tasted good, but were hard to completely cook through. Dark on the outside, but still a bit gooey in the middle even when cooked slowly over low heat. Kids liked them though and gave them a 9/10. - 1/17/09

    Made them for breakfast this morning. Used whole wheat organic flour, xylitol crystals for the sweetener and added walnut pieces. They were great. Next time I'll add Textured Soy Protein to the batter to increase the protein content. - 1/16/08

    I used Splenda to sweeten and whole wheat flour. These had a very hearty texture, but to make a meal, I wasn't satisfied with just one serving - about 1.5 was good. I also did use syrup, but with a little more sweetener it may not have been necessary. Tasty! - 4/5/09

    not good! they were heavy and gooey, I added all ww flour and a pinch of salt, but kept everything else the same. I had to cook them slowly to keep them from burning while the inside cooked. My kids, who love pancakes, ate one and were done. - 1/17/09

    Sounds great. DH loves bananas so this should be a treat for him. He will of course want to use maple syrup regardless. I'll try it at the next pancake breakfast. - 1/16/08

    Yummy! but I didn't use anywhere near the amount of sweetener suggested! And I used a 50/50 mix of regular with whole wheat flour to add a bit more fiber to the mix. Great way to use up that last almost too ripe banana. If you do use syrup and fruit, remember to add those to your nutrition tracker. - 5/28/07

    I would rename this Vegan Brainless Banana Flatbread. AND not even sweet flatbread. As many stated though, it is a good starter recipe to tweak to your own recipe. Mine was closest to SPARKLE72023 but I added cinnamon, raisins and sweetened almond milk. AND 2/3 and 1/3 with the flours.Could serve 6. - 4/16/13

    Very good. I used light vanilla soy milk that gave it additional sweetness, not that it was really needed , and all whole wheat flour. I topped it with some thawed frozen mixed fruit and it was really good. I made enough for 3 servings and saved the batter for tomorrow's breakfast. - 2/11/12

    Delicious with gluenfree flour and 3/4 cup nonfat milk. Note on pancake/baked goods tenderness: Don't over-blend wet and dry ingredients; use rubber spatula and leave lumps! I topped with EarthBalance margerine and ripe persimmon globs. - 12/22/11

    I make these ALL the time!Instead of using normal flour or a 50/50 blend I just use White Whole Wheat flour which has the same nutritional value as whole wheat without that bitterness. AMAZING even for those of us who aren't vegans! - 8/8/11

    I would probably use whole wheat or buckwheat flour--also nutmeg or cinnamon. Perhaps peanut butter and/or sugar free syrup.

    Replace the flour with WHOLE WHEAT FLOUR or other whole grain grain flour alternatives and this recipe is great. I make pancakes almost everyday as I am pretty active physically and need a protein carbo boost.... instead of soy milk I use regular milk and 2-3 egg whites, as I'm not a vegan ;) Cheers - 1/16/09
