    1 egg
    1/2 Cup Skim Milk
    1/4 Cup Canola Oil
    1 Cup Grated Raw Zucchini
    1 tsp (or to flavor) Cinnamon
    1/2 tsp (or to flavor) Nutmeg
    1/2 Cup Sugar
    1 1/2 Cup Flour (whole grain)
    1/2 tsp Salt
    1 tsp baking powder


Preheat Oven to 400 F

Beat Egg, add all wet ingredients.

Mix all dry ingredients. Add to wet and mix until just blended (will be lumpy) DO NOT OVERMIX!

Place in greased muffin tins. Bake at 400 F for 25 minutes or until toothpick comes out clean.

Makes aprox 7 muffins.
