Introduction

Creamy, flavourful soup loaded with calcium and potassium. Any cheese could be substituted. Creamy, flavourful soup loaded with calcium and potassium. Any cheese could be substituted.

Ingredients

    8 cups fresh Broccoli, chopped
    1 cup Greek style Yogurt
    1 cup Low Sodium Chicken broth
    1 cup 2% Milk
    3 oz hard Goat Cheese

Directions

Place chopped broccoli in microwave dish with chicken broth and microwave for 15 minutes or until broccoli is tender.

Let cool, add in milk and puree in a mixer/food processor or with a stick blender.

Add in yogurt and stir. Grate cheese on top, reheat and serve.
