Ingredients

    1 lb. shrimp, peeled and deveined
    2 cloves garlic, minced
    2 tbsp. fresh lime juice
    3 tbsp. olive oil
    2 tsp. tequila
    3 tbsp fresh chopped cilantro
    1/4 tsp. ground red pepper
    1/4 tsp. salt
    4 bamboo skewers, soaked in water 20 minutes

Directions

Combine the garlic, lime juice, olive oil, tequila, cilantro, red pepper and salt. Add shrimp & toss to combine. Refrigerate 30 minutes to 3 hours. Preheat grill for high heat & lightly oil grate. Remove the shrimp from the marinade & discard leftover marinade. Thread the shrimp on the skewers. Cook on preheated grill until the shrimp turn pink, 2 to 3 minutes per side.
Makes 4 - 4 oz. servings

    Incredible!
    I IMade this tonight, was absolutely AWESOME. Put it on skewers, added button Mushrooms then served it over a Brown Rice Medley. Very tasty, DH loved it. The other thing I did was doubled the Tequila, and I’m glad I did. Thanks for the recipe, I’ll surely make it again. - 6/17/11
