Yet another way to use up summer zucchini! Yet another way to use up summer zucchini!
Number of Servings: 8


    1 lb ground turkey
    1- 15 oz container fat-free ricotta
    2 c grated zucchini (drained well)
    1 egg white
    3 cloves garlic
    1 box Jumbo pasta shells
    2 garlic cloves
    1 T dried oregano
    1 T crushed red pepper
    1 T dried parsley
    2-29 oz cans tomato sauce


Brown turkey and mix the first 5 ingredients together in a bowl. Boil water and cook shells. Make a simple sauce out of regular, canned tomato sauce (this will have way less sodium than Ragu or other store bought brands), garlic, oregano, parsley, and crushed red pepper. Stuff the shells with the meat mixture and poor sauce over top. Bake at 350 for 30-45 minutes. Makes 8 servings (about 4 shells each). Serve with a salad and add a little mozzarella or parmesan if you like (just remember to count the calories).
