Ingredients

    1 lg onion
    1 each green, red, and orange bell pepper
    2 tsp minced garlic
    20 baby carrots
    1 T olive oil
    20 oz. ex-lean ground beef
    2 tsp Mrs. Dash
    2 tsp dried oregano
    1/4 tsp salt
    2 14.5 ounce cans diced tomatoes
    1 can 14.5 ounces chicken broth
    1 10 ounce box frozen chopped spinach
    2 cups whole-grain instant brown rice, dry
    1/2 cup grated parmesan cheese

Directions

Cut all vegetables into small wedges. heat oil in a large nonstick pan and saute' the vegetables and the garlic. Add the ground beef to the veggies.

Add seasonings to the veggies. Once the meat is completely brown, add broth, tomatoes and frozen spinach.

Bring mixture to a boil and add rice and cheese. Stir well. Cover and set timer for 5 minutes.
