Introduction

Friend bought some "just cranberries" (they are dried cranberries) and didn't like the taste, I took them and made wonderful muffins. Friend bought some "just cranberries" (they are dried cranberries) and didn't like the taste, I took them and made wonderful muffins.
Number of Servings: 12

Ingredients

    2 cup whole wheat flour
    1/2 cup splenda
    3 tsp baking powder
    1/2 tsp salt
    1.5 oz of dry cranberries
    1/2 cup walnuts
    1 egg, beaten
    3/4 cup skim milk
    1/3 cup unsweetend applesauce

Directions

preheat oven to 400, grease muffins tins with cooking spray, or paper line.
mix splenda, flour and baking powder tog, add in cranberries mix gently.
In small bowl ,beat egg, add in milk and applesauce, mix tog.
add to dry ing. bake for 18 to 22 minutes.
makes 12 muffins

    Very good! Thanks for the recipe! I omitted the walnuts because I don't like them, but I love dried cranberries. Omitting the walnuts took the calories and fat down quite a bit too. - 9/28/08
