    1 whole eggplant, unpeeled and sliced lenghth wise (1/4 inch wide slices)
    1/2 c. egg beaters
    1/2 c. seasoned bread crumbs
    Pam spray olive oil
    1 can Hunts Garlic & Herb Sauce
    1/2 cup Parmesan Cheese


Slice eggplant in length wise strips. Dip in Egg Beaters and lightly roll in bread crumbs. Place on foil cover pan, sprayed w/ Pam. Spray tops of egg plant. Bake in 350 degree oven approximately 30 min. till fork tender.

Mix up 1 cup of Ricotta cheese. I added a small amount of chopped onion, garlic and pepper for extra flavor.

Put about 1 lg. T. of cheese filling in each cooled eggplant and roll it up. Place in Pam sprayed baking dish.

Pour over one can of Hunts Garlic & Herb sauce (or your favorite spaghetti sauce).

Sprinkle on 1/2 c. of Pamesan Cheese.

Bake in 350 degree oven for about 30 min. Till eggplant is bubbly and cheese is melted. Divide into 4 servings and serve over 1/2 cup of whole wheat spaghetti. Can also be sprinkled w/ Parmesan Cheese for a little more flavor.
