Introduction

I've substituted flaxseed for some of the flour and oil to make this a healthier treat. I've substituted flaxseed for some of the flour and oil to make this a healthier treat.
Number of Servings: 24

Ingredients

    1 1/4 c. flour
    1c sugar
    4T flaxseed
    1t baking powder
    1t baking soda
    2t cinnamon
    1/4t salt
    2 eggs
    2T oil
    2c shredded zucchini
    1c semisweet chocolate chips
    4T water (as needed)

Directions

1. Mix dry ingredients together in a large bowl.
2. Add eggs, oil, zucchini and water if needed, mix well.
3. Fold in chocolate chips.
4. Bake at 325 for about 80min or until knife comes out clean. Let cool, turn out from pan and enjoy.
Yield: 24 pieces.
