Quick and Easy High-Protein Low-Carb Omelet Quick and Easy High-Protein Low-Carb Omelet

    1 lg egg
    1 egg white
    1/4 C Shredded Cheddar
    1/4 C Skim Milk
    1 TBSP Salsa
    Olive Oil Spray
    Pepper to taste


1. Combine whole egg, egg white, pepper, and skim milk in bowl. Beat with fork.
2. Lightly spray pan with OO spray. Heat pan on med heat.
3. Add egg mixture to pan. As egg cooks, lift sides and tilt pan, allowing raw egg to pour underneath the cooked egg. Continue this until all raw egg mixture is cooked.
4. Using a lg spatula or pancake turner, carefully flip egg over.
5. Add cheese and fold egg in half.
6. Carefully slide out of pan onto serving plate. 7. Add 1 TBSP Salsa to top of omelet.
8. Enjoy!
