    1 Tbsp Olive oil
    0.5 C chopped onion
    3 cloves garlic, minced
    1 lb chopped fresh kale (or other greens)
    1 C egg substitute
    15 oz. container part skim ricotta cheese
    0.5 C grated parmesan cheese
    3/4 C skim milk
    2 T cornstarch
    1 tsp hot sauce (optional)
    1 tsp salt
    1 tsp ground black pepper
    1/4 tsp nutmeg


Preheat oven to 350 degrees. Grease or non-stick spray a 9" deep dish pie plate. Heat olive oil in large non-stick skillet or dutch oven. Add onion and garlic and saute 1 minute. Gradually add chopped kale and cook until most moisture is released (about 5 minutes). In a large bowl, mix egg substitute, ricotta cheese, parmesan cheese, milk, cornstarch, hot sauce, salt, pepper, and nutmeg. A whisk works well for this. Add kale mixture to wet ingredients and mix well. Spoon into prepared pie plate and bake for 40 minutes or until knife inserted in center comes out clean. Serves 10.
