    1 - 15 oz. can black beans, rinsed and drained
    2 tsp. olive oil
    Juice of 1 Large Lemon
    1 Tbsp. parsley, chopped
    1 Tbsp. basil, chopped
    1 Tbsp. chives, chopped
    2 garlic cloves minced (or 1 tsp. minced garlic in water)

    1 cup Quinoa
    2 cups water
    dash of salt


Put quinoa in a fine strainer and thoroughly rinse with hot water.

In a medium saucepan, bring quinoa and water to a boil over high heat. Reduce the heat to low, cover, and simmer for 12-15 min. Cook until quinoa is tender and the water is absorbed.

1 Serving = 1/3 c. cooked

Put beans, oil, lemon juice , herbs and garlic into a large bowl. Stir, cover and refrigerate for at least 30 min prior to serving. Will keep refrigerated for 5-7 days.

Yield - 4 servings

Put 1 serving of quinoa in a bowl and top with 1 serving of black beans. Enjoy!!

***In the Biggest Loser version, they also add in 1 1/2 cups of canned diced tomatoes. I cannot bring myself to eat tomatoes so I omit them.
