Refreshing low-cal dessert! Better tasking and more satisfying than most store bought "diet" desserts and low enough in calories that it won't interfere with your diet! Ingredients

    3/4 cup sliced strawberries
    3/4 cup boiling water
    1 pkg 4 serving size strawberry sugar free jell-o
    1/2 cup cold water
    3/4 cup ice cubes
    1 cup thawed Cool Whip Free

Directions

Makes 4 servings

Spoon sliced fruit evenly into 4 glasses. I used 9 oz clear solo disposable cups. Stir boiling water into dry jell mix in medium bowl for at least 2 mins until completely disolved. Add cold water and ice cubes, stir until completely disolved. Pour about 1/4 cup of jello over each cup of fruit in glasses. Refrigerate glasses for 20 mins, but leave remaining jell- on counter. After 20 mins, add whipped topping to remaining jell-o and combine until blended. Spoon evenly over jello in glasses.

Refrigerate 1 hour until firm. Top with additional whipped topping and a strawberry slice for garnish if desired.

Also wonderful with peach sugar free jell-o and sliced peaches from a can, or mandarin oranges and sugar free orange jell-o.
