    1 tbsp Olive Oil
    1/2 cup chopped onion
    1/2 red sweet pepper, diced
    2 stalks celery, sliced
    1 Smoked Mozarella w/Artichoke and Garlic Chicken Sausage, thinly sliced
    4 ounces medium size shrimp, shelled, deveined and cut into half
    1 can Muir Glen Organic Fire Roasted Diced Tomatoes
    1 cup frozen yellow corn
    10 ounces frozen sliced okra
    1 can Black Beans, rinsed and drained
    3 tbsp Creole Cajun Spice
    1 cup of water


Heat up skillet, add olive oil. Add onions, celery, diced red pepper. Add sliced up sausage. Saute for 5 minutes. Add seasonings, corn, okra, diced tomatoes, beans and water. Let simmer for 30 minutes. Add shrimp and let simmer for 5-10 minutes, until shrimp turns pink. Makes 6 1-cup servings.
