    Pumpkin puree(15 oz can)
    Leeks (3 med)
    Potato (4 medium)
    Olive Oil (1 tbsp)
    Chicken Broth (4 cups)
    Curry powder (2 tbsp)
    Garlic (3 cloves, minced)
    Black pepper (2 tsp)


Slice leeks length wise and rinse to remove dirt, slice into thin strips. Peel and cut potatoes to medium dice.
Heat large soup/stock pot over medium heat. Add olive oil, leeks and garlic. Cook until leeks are soft. Add curry powder, chicken stock, and pumpkin stirring until smooth. Add potatoes and bring to boil. Reduce heat to simmer and cook for 30 minutes.
Allow to cool slightly. Puree until smooth in blender or with immersion blender, in batches if needed.
Return to pot and heat through and add black pepper.
Makes 6 servings.
