    1 med cucumber
    4 plum tomatoes
    1 med red onion
    2 Tbsp EVOO
    2 Tbsp cider vinegar
    sugar to taste
    1/2 tsp seasoning salt
    pepper to taste


Peel and slice cuke, onion, and tomato into bowl; set aside. In small bowl mix remaining ingredients, pour over cuke mixture. Cover and chill well before serving.
