    1 pound raw small salad shirimp
    1 small stalk celery, from the heart
    1/2 small yellow onion, cut into chunks
    1 clove garlic
    A handful of fresh flat-leaf parsley leaves
    1 Tbsp Old Bay Seasoning
    1/2 tsp cayenne pepper
    1 tsp chili powder
    Grated zest of 1 lemon
    Salt and Pepper to taste
    2 Tbsp Olive Oil
    4 English muffins
    1/4 c light mayo
    1/4 chili sauce, salso, or taco sauce


Put half the shrimp in the food processor and grind them up. Thransfer the ground shrimp to a bowl using a rubber spatula. Add the remaining whole shrimp to the bowl. Put the empty food processor bowl back in place and add celery, onion, bell pepper, garlic, parsley and pulse-grind the mixture into a fine chop. Add the vegetable mixture to the shrimp. Add Old Bay Seasoning, cayenne, chili powder, lemon zest, salt, and pepper to the bowl. Stir the shrimp mizture to combine.

Preheat a large nonstick skillet over medium heat to medium-high heat. Add olive oil. Use a large metal ice cream scoop to scoop four mounds of shrimp-burger mixture into the pan. Gently pat down to form patties. Fry patties until they firm up and the shrimp turn pinkish white, 3 to 5 minutes on each side.

Split the english muffins. Mix mayo and chili sauce together. Place burgers on muffin bottoms, slather the top of the muffins with sauce and enjoy.
