    1 can chickpeas
    1 can black beans
    1/2 sweet red pepper
    1 can corn
    2 green onions, sliced

    1/4 c canola oil
    1 tsp grated lime rind
    4 tbsp lime juice (or juice of above lime)
    1 1/2 tsp chili powder
    1 tsp sugar
    1/4 tsp salt


Drain & rinse chickpeas & black beans; add red pepper, corn & onions, set aside.

Whisk together oil, lime rind & juice, chili powder, sugar & salt; pour over beans & toss to coat.

Cover & refrigerate up to 24 hours (tastes better if you let it sit overnight)

Yields 6 - 1 cup servings
