    1/4 Cup Canola Oil
    10 Corn Tortillias
    1 Pd. Chicken breast, no skin (fat cut off)
    1 1/4 Cup Low Fat Shredded Cheddar Cheese
    3/4 Canned Tomatoes (diced with sweet onions and roasted garlic)
    4 Tbs. I can't belive It's Not butter
    1 Green Bell Pepper


Cut up Chicken into bite size, and cook in skillet until no longer pink. (about 10 Mins.)
Add in Bell Pepper, and 3/4 of canned Tomatoes, turn heat to Med. While the Chicken is cooking put 1/4 Cup in skillet, and let the oil get hot. Fry 1 tortilla at a time, folding in half. Fry both sides until slightly crisp. Put tortillas on paper towels to help absorb extra oil. When ready to eat top off with the cheddar cheese.
