    1C Whole Wheat Flour
    1C Instant Oats
    1/2C Skim Milk
    1Lrg Egg
    1/4C Applesauce
    1/4C Splenda
    2tsp Baking Powder
    1C Strawberries, sliced
    6tbsp Sugar Free Strawberry Preserves/Jelly


1.Preheat oven to 400 degrees. Lightly coat a large muffin tin (serves 6 large muffins) with some type of cooking spray.
2.In a bowl, combine the egg, milk, and appleauce. Mix till blended.
3.In a seperate bowl, mix together the flour, oats, splenda, baking powder, and salt.
4.Add dry ingredients to wet ingredients and mix until moistened.
5.Gently fold in sliced/chopped strawberries (fresh/thawed).
6.Fill muffin tin with alternating layers of muffin mix and strawberry preserves, 1tbsp of jelly per muffin. You should end up with two layers of jelly, 3 layers of muffin mix per muffin.
7.Bake for 25 minutes. Let sit in pan around 5 minutes before removing to a wire rack to cool completely. Store in the refrigerator to keep fresh.
