Cabbage Soup - the way I cook it. Cabbage Soup - the way I cook it.

    1 tbsp Chili powder
    1 tbsp Garlic powder
    1 tbsp Onion powder
    2 tbsp Oregano
    2 tbsp Paprika
    1 head of cabbage
    1 celery heart, chopped
    1 tbsp Minced Garlic
    1 medium onion, chopped
    2 28 oz cans of Diced Tomatoes
    1 Zucchini, chopped
    2 cups Water
    3 carrots, chopped (or some baby carrots)


Find a big ol' pot to cook your soup in. I cut up the onion and cabbage. Throw it in. Open up the cans of diced tomatoes (or whatever kind you prefer). Throw those in. Use one to measure out 2 cups of water. Recycle cans. Cut up celery and carrots. Throw those in. Throw in a spoonful or two of minced garlic (or if you are fancy, use fresh). The spices I just play by whatever is in my cabinet. I sometimes use some Goya Adobo but that probably pumps up the sodium intake. Cook on medium to low heat for at least an hour. Or until you reach desired tenderness.

This makes a lot of soup - but if you are like me, you probably eat a lot. Makes 12 hearty portions.
