Introduction

Ingredients

Onions, raw, 1 cup, chopped
Chopped Pecans, 1/4 cup
Garlic Clove, minced
Apricots, 1/4 cup
Butter, 1 tbsp
Breadcrumbs, dried 1/4 c.
Pork Chop, center cut, 4 - 4 oz
Seedless Raspberry Preserves, 1 tbsp
Directions
Put onions, pecans, and clove into food processor and chop fine. Place all in skillet and saute with butter until onion is tender.
Add breadcrumbs to food processor and chopped apricots. Chop until small crumbs and then add with above ingredients in one bowl with 1 Tbsp. of water.
Pound pork chops flat, spread a quarter of the mixture onto each porkchop. Roll porkchop around mixture. Secure with toothpicks if need be.
Grill for about 10-15 minutes until no longer pink or bake at 375 degrees for 30 minutes.
Before serving, take jelly preserves which have been heated in the microwave for 30 seconds or less and brush over the exterior of porkchop.
