Introduction

I made my own cream of mushroom soup (Make Your Own "Cream Of" Soup on Sparkrecipes) for this recipe. Ingredients

    1 can chicken, chopped
    1 cup cooked rice
    1/2 med. onion chopped
    1/4 cup chopped celery
    1/2 can equivalent mushroom soup*NOT INCLUDED IN NUTRITIONAL COUNT
    1/2 cup light mayonnaise
    2 tbls. lemon juice
    1/2 tsp. salt
    2 grated hard-boiled eggs
    1- 9" deep dish pie shell
    1 cup crushed corn flakes
    2 tbls. light butter

Directions

Bake pie shell according to package directions. Mix together the first nine ingredients. Fill baked pie shell with chicken mixture and bake at 350 degrees for 40 minutes. Melt butter and mix into corn flakes. Sprinkle over pie and bake 5 minutes more.
