Ingredients

I acorn squash
1/2 cup cooked and drained ground beef
1/2 cup chopped celery
2 TBS chopped onion
1/2 box frozen spinach, thawed
1 tsp flour
1 egg, slightly beaten
1/8 tsp salt
1/4 cup light sour cream
Directions
Cut squash in half; remove seeds. Place cut side down in baking dish with 1/2 inch water.
Bake at 350 degrees for 25-30 minutes.
In small skillet, ground beef, celery and onion. Drain. Add spinach.
In a bowl, mix flour, egg, salt and sour cream. Stir into beef mixture.
Spoon into centers of squash and return to oven for 15-20 more minutes.
Makes 2 servings
