    1 tablespoon oil
    1 medium onion, chopped
    1 small bell pepper, seeded and chopped
    2 minced garlic cloves
    3 cups slow cooked pinto beans
    14.5 ounce can diced tomatoes, drained
    4 ounce can diced green chilies,drained
    1 granny smith apple, peeled, cored and chopped
    1 cup vegetable broth
    2 cups long grain white rice
    1/4 cup sliced black olives
    2 tablespoons parsley


Heat oil in skillet. Add onion and bell pepper. Cover and cook until soft. Transfer to slow cooker. Add garlic, beans tomatoes, chilies, apple and stock. Season with salt and pepper, cover and cook on low 6 hours. About 10 minutes before serving, stir in rice, olives and parsley.
