    I cup jasmine rice
    1 lbs shelled and deveined medium shrimp
    2T fish sause
    1T soy sauce
    2T lime juice
    3 cloves garlic
    1T oil
    2 medium stalks of celery - cut in half lengthwise then thinly sliced
    1C shredded carrots
    2T grated ginger
    1C loosely packed cilantro
    1C loosely packed mint
    12 leaves Bibb lettuce


Serves 4 - 3 lettuce wraps per serving

Prepare rice

Coursely chop shrimp and add fish sauce, soy sauce, lime juice and garlic, set aside

In non stick pan heat oil over medium heat. Add celery, carrots, ginger and cook 2 minutes. Add shrimp mixture and cook additional 1-2 minutes until shrimp are opaque, stirring constantly. Remove from heat and add 1/2 cilantro and mint.

Divide rice among lettuce leaves and top with shrimp mixture and remaining herbs. Fold over leaves and eat out of hand.
