    2 T. olive oil
    1 lb. Italian Sausage, cut into 2-inch pieces
    2 oz. Bacon, chopped
    1 onion, chopped
    2 carrots, chopped
    1 celery stalk, chopped
    3 cloves minced garlic
    1/4 c. dry vermouth
    1 lb. lentils
    1/4 c. barley
    8 oz. sliced mushrooms
    2 bay leaves
    1 bunch chopped Swiss chard
    3 pints water


Makes 4-6 servings

1. Brown sausage in olive oil in a dutch oven.
2. Remove sausage and drain off most of the fat.
3. Add bacon to the pan and saute until crisp.
4. Add in onion and saute for 2 minutes.
5. Add in carrots, celery, and mushrooms and saute for 2 more minutes or until vegetables begin to soften.
6. Add in garlic and saute for 1 minute.
7. Deglaze pan with the vermouth, scraping to remove the drippings on the bottom of the pan.
8. Add in lentils, barley and bay leaves. Stir. Add in water.
9. Bring to a boil. Add sausage back to the pot. Simmer for 40 minutes or until lentils and barley are soft.
10. Season with salt and pepper.
11. Add chopped Swiss chard, cover and simmer 10 minutes.
