    1T Olive Oil
    3 stalks celery, chopped
    3 cloves garlic, chopped
    4 c vegetable broth
    1.5 28 oz cans crushed tomatoes
    .5 can chickpeas
    1 can black beans
    6 medium corn tortillas, torn into quarters or smaller
    3 T Cilantro
    4 T plain yogurt
    4 oz cheddar cheese, small cubes


Heat oil and add celery and garlic, cook 3 minutes. Add broth, tomatoes, chickpeas, beans, bring to boil stirring occasionally. When boiling add tortillas and cilantro and reduce heat to simmer for 20 minutes, or until tortillas have dissolved. In each serving bowl place 1 T yogurt and 1oz cubed cheese. Add soup on top and serve. If desired, add avacado slices for garnish (not included in nutritional calculation).
