    1 zucchini, sliced
    1 Tbsp butter or olive oil
    1 sm onion sliced
    1/2 of green or red pepper, sliced
    1 cup DelMonte Stewed Tomatoes
    1/4 cup shredded cheddar cheese(optional)


Saute sliced onion in butter until yellow. Add pepper and zucchini, cook & stir 5 min. Add stewed tomatoes, season with salt, pepper, garlic salt (or spices of choice). Reduce heat and heat about 10-15 min until water is reduced.
Options: Sprinkle with cheddar cheese and heat until melted. Nutrition information includes cheese. May choose to bake in oven at 375 until cheese melts and browns.
Serves 2 Can easily add more zucchini & vegetables to increase servings.
