Number of Servings: 3

Ingredients

    1 large italian eggplant, peeled
1 egg, beaten with a tbsp of water
    1/2 cup bread crumbs
1/4 cup tomato or pizza sauce
1/4 cup shredded part-skim mozzarella cheese or italian cheese blend

Directions

Pre-heat your oven to 350 degrees.

Peel a large eggplant and cut into long "steaks" or "circles".

Dip the eggplant slices into the beaten egg then the breadcrumbs making sure it is lightly covered.

Place on a non-stick cookie sheet and place in the oven for 20 minutes. Check that the eggplants are "fork-tender", then spoon tomato sauce on them and top with the cheese. I usually leave a few without sauce.

Bake again until the cheese has melted.

These are great as a meal, or as a filling for a hero, or sliced over a salad. I especially like them without the sauce and cheese on top of a tomato bruchetta salad.

Enjoy!

Very Good Recipe! I've lightened it a little, by just using the egg white & water with panko bread crumbs. I sometimes eliminate the sauce & cheese. I'll sprinkle it with a little garlic powder & grated parm. - 6/6/11

This was so good...however, I did not use bread crumbs or eggs. I simply baked the sliced eggplant for a few minutes and then topped with my toppings. Either way I will be making this A LOT - 9/25/10

I'd never cooked eggplant before so I decided to try this recipe. It turned out very tasty! I did half the batch with panko breadcrumbs with Italian seasoning and the other half with regular Italian spiced breadcrumbs. I preferred the regular breadcrumbs. - 8/17/10

I use only egg white & water, then only dip one side in bread crumbs-- bake crumb side up- then flip to crumb side down to add sauce and cheese for 2nd bake-- no one misses the extra crumbs :-) - 5/10/21

I love the versatility of eggplants. I chose to leave out the bread crumbs and the eggs as well and upped the seasoning to the toppings. I can see doing this with a variety of vegetables. - 7/16/18

I made a very similar recipe some 30 years ago and told my kids and my nieces and nephews that it was a new kind of pizza. All eight of them ate it and liked it, although one of them figured out it was eggplant :) - 2/3/14

I made this last night for dinner, and it was great!! My boyfriend has an absolute hatred of eggplant that he is passing on to our daughter and kept giving me scathing glances when I was making it. He made pasta for himself and my daughter had 2 pieces! Brought it for lunch today :) - 11/8/10
