Savory mixture that stir fries quickly. Great with fish or scallops. Savory mixture that stir fries quickly. Great with fish or scallops.

    2 Tbl extra virgin olive oil
    2 cloves garlic, minced
    1 Tbl fresh ginger root, minced
    1 medium red pepper, seeded and sliced
    1 medium onion, sliced
    2 Cups fresh broccoli flowerettes
    6 baby yellow or orange baby carrots, julienned
    1-2 tsp low-sodium soy sauce


In a wok or large saute pan, heat the olive oil. Add the garlic and ginger and stir-fry 1 minute or until golden. Add peppers, onions, broccoli, and baby carrots. Stir-fry until tender crisp. Shake soy sauce over the top as frying (to taste--do not exceed 2 tsps).

Served with Spiced Scallops over brown rice!
