Ingredients

    1/3 c bread crumbs
    3/4 c 1% milk
    16oz canned salmon in water
    1 large egg, separated
    3/4 c diced celery
    3/4 c diced onion
    1/4 tsp black pepper
    2 tbsp lemon juice (fresh)

Directions

Preheat oven to 350F. Spray 9x5" loaf pan (or grease). Combine bread crumbs, milk and water from canned salmon in a bowl. Let stand 5 minutes.
Flaked salmon, Beat egg yolk lightly. Add salmon, egg yolk, celery, onion and black pepper to bread crumb mixture. Stir gently.
Beat egg white until foamy, stir into salmn mixture. Turn into loaf pan, bake for 1 hr. Cool slightly on wire rack before turning upside down on serving plate. Sprinkle with lemon juice. Serves 4
