Introduction

These are wonderful burritos that I never feel guilty for eating! They take almost NO time at all to cook so are great for last minute meals. These are wonderful burritos that I never feel guilty for eating! They take almost NO time at all to cook so are great for last minute meals.
Number of Servings: 4

Ingredients

    1 can of Black Beans
    About 1/4 cup of chopped onion
    1 mango (fresh or frozen)
    1 Tbsp Canola Oil
    2 cloves of garlic (minced)
    Dried Cumin
    Salt and Pepper to taste
    Sour Cream and Cheese for toppings (opt.)
    Your choice of tortilla (not calculated in recipe)
    Hint* Some fresh cilantro can serve as a nice garnish.

Directions

Saute onions and garlic in a sauce pan. Drain most of the liquid from the Black Beans (you can always add water later if the beans dry out) and then put them in with the onions. Once hot, mash about half and add spices to taste.
Thinly slice mangoes.
Place beans and mangoes on burrito, top with cheese and sour cream and enjoy! Add cilantro if you like!
