Ingredients

    Eggplant, fresh, 1 cup, cubes
    Zucchini, 2 cup, sliced
    Canned Tomatoes, 1 can
    Onions, raw, 1 cup, chopped
    Green Peppers, 0.5 cup, chopped
    Water, 16 oz
    Lentils, 1 cup
    Salt, to taste
    Baby Carrots, raw, 15 medium cut in half
    Pepper, black, to taste
    Garlic clove, minced

Directions

6 one cup servings

Combine all ingredients in soup pot, cover and simmer 40 minutes.
