i basically added this just to add up the calories but it's a really good, light, and healthy dinner that's usually eaten with rice. i basically added this just to add up the calories but it's a really good, light, and healthy dinner that's usually eaten with rice.

Ingredients

    squash or zuccini (upo is the pilipino squash that i usually use)
    1 medium onion
    1 large tomato
    3 cloves of garlic
    2-3 oz of flank steak, pork or shrimp ( preferable)
    2 tbsp of oil
    salt and pepper to taste

Directions

heat oil in pan. add garlic and onions until union is transparent. be careful not to burn the garlic. dice tomato and add to the pan. add the meat (diced) or shirmp and stir until browned. finally add squash and about a cup of water. let simmer until squash is transparent. add salt and pepper to taste
