Delicious oven baked meat and vegetables. Delicious oven baked meat and vegetables.

    1/4 c. oil
    1 1/2 lb. beef round, cubed
    3 onions
    3 tomatoes
    1 green pepper
    2 tsp. salt
    1/4 tsp. pepper
    3/4 c. sliced celery
    2 c. cubed eggplant
    2 zucchini, sliced


Heat oil. Add beef & brown on all sides. Pour off fat & turn beef & drippings into large casserole. Peel onions & quarter, slice tomatoes & green pepper, and add to meat. Sprinkle with 1 tsp. salt & 1/8 tsp. pepper. Cover & bake at 350 degrees 1 hr. & 15 min. Add celery, eggplant & zucchini. Sprinkle with remaining salt & pepper. Cover & bake 45 min. longer.

Makes 6 generous servings.
