Ingredients

    SALAD INGREDIENTS
    4 medium red or purple potatoes, boiled
    1 small cucumber, chopped
    1 medium red bell pepper, chopped
    1/2 cup chopped red onion
    8 lg. Spanish Olives, sliced into rounds (with/or without pimiento stuffing)
    DRESSING INGREDIENTS
    1/4 cup of olive oil
    3 Tbsp of balsamic or sherry vinegar
    1 Tbsp honey
    2 cloves of garlic, chopped or mashed
    salt and pepper to taste

Directions

Boil the potatoes a day ahead and cool in refrigerator. To prepare: remove potatoes from refrigerator and slice into 1/2 in thick slices. In a medium to large bowl, combine potato slices, chopped cucumber, bell pepper and onion.
Prepare dressing: In a jar or other shaker, combine olive oil, vinegar, honey, garlic, salt and pepper. Shake to emulsify.
Dress the salad with the vinagrette. Top with sliced olives. Serves 4.
