Ingredients

    1 cup flour
    1 cup cornmeal
    1 cup corn kernals
    .25 cup sugar
    1.5 tsp baking powder
    1 tsp baking soda
    1 cup skim milk
    .25 cup canola oil
    2 egg whites

Directions

Whisk together dry ingredients in a large mixing bowl.
Combine wet ingredients seperately, then pour into dry ingredients. Mix until batter is consistent.
Pour into greased mini muffin pan.
Bake 20 minutes at 375 or until toothpick comes out clean.
