Ingredients

    1 cup zucchini, sliced, then halved
    1 cup red pepper, strips
    1 cup onion, sliced, then havled
    1 cup tomatoes, sliced, then halved
    1 T Parmesan Cheese
    1 T. Olive Oil
    2 tsp garlic, minced
    salt and pepper, to taste

Directions

Combine all ingredients (except cheese and salt/pepper) and sautee in frying pan, until veggies are crisp-tender, toss in cheese and season with salt and pepper to liking.
