Introduction

This is a receipe that my mother made when we were younger. I am not sure what they are really called, but we all know them as rubber pancakes as the pancake has more of a crepe texture and not fluffy. We have also made this using wheat flour and although the pancakes are a little heavier, they still taste great. This is a receipe that my mother made when we were younger. Number of Servings: 7

Ingredients

    Flour, white, 1.5 cup
    Milk, 2%, 2 cup
    Applesauce, unsweetened, .25 cup
    Granulated Sugar, .25 cup
    Baking Soda, 1 tsp
    Egg, fresh, 1 large

Directions

Mix all ingredients together. Batter will be somewhat thin. Place 1/2 cup batter in hot pan and cook on both sides. Pancake will have a thick crepe texture.

Additional Changes.
The original receipe calls for 1 TBSP of oil instead of applesauce. We used applesauce to lower the calories and fat content.
Also, you could replace the sugar with splenda as well.
Substitute wheat flour for white flour
