Number of Servings: 8


    3 cups frozen strawberries
    1.5 cups frozen mixed berries
    2 cups Fiber One cereal (original)
    1/4 cup Smart Balance Light spread
    1 oz. water
    1/4 cup cornstarch
    4 Splenda packets
    4 Tbsp. Splenda (granulated)
    1 Tsp. cinnamon
    1 Tbsp. vanilla extract
    (add Cool Whip Free if you like)


Preheat oven to 350.

Grind Fiber One in blender to breadcrumb-like consistency. Add with butter, water, cinnamon, and Splenda packets.

Spray 9-in pie pan with Pam and place crust mixture along bottom and sides. Bake for 10 min. and remove to cool.

Heat berries on medium heat until mostly thawed. Add Splenda (granulated), cornstarch, and vanilla extract. Mix well.

After mixture begins to bubble, reduce heat to low, stirring occasionally for about 5 minutes (or until it gets thick). Remove from heat and allow to cool.

Spread mixture into pie crust. Place in fridge for several hours.

Cut into 8 slices. If you like, add fat free Cool Whip.
