Ingredients

    1 lb cleaned calamari1 lb shrimp1 lb scallops1 lb clam meat1 lb lump crab meat, picked over to remove      any shells or membranes1 c. juliened celery1 c. juliened carrot1 c. juliened, seeded tomato1 c. juliened bell pepper2 green onions thinly sliced, both green and white parts2 T. chopped fresh parsley2 T. chopped fresh basil2 cloves garlic, minced3 oz. fresh lime juice1 T. cider vinegar1/2 cup olive oil8 c. mesculin salad greens, or any type of salad greens you may like

Directions

Thaw all seafood if frozen. Bring 2 quarts of water to boil. Reduce heat to medium. Put all seafood that is uncooked in boiling water. Cook about 5 minutes or until all seafood is cooked through and opaque. Drain seafood and set aside to cool.(Usually lump crabmeat is sold cooked, cleaned, and frozen or canned so it will not need to be placed in the boiling water with the rest of the seafood)In a large bowl, toss all vegetables and herbs.In a small bowl, wisk garlic, lime juice, vinegar, and olive oil. This is the dressing for your salad.Peel shrimp. Slice calamari bodies crosswise into 1/4' rings discarding any cartilage you find. Leave tentacles whole. If scallops are large, cut in halves or quarters. Add all cooled seafood to bowl with vegetables and toss until well mixed. Pour dressing over seafood and toss lightly until all seafood and vegetables are coated. Seafood salad may now be chilled for later or served immediately at room temperature.To serve, spread 1 c. of salad greens on each of 8 plates. Top greens with 1 1/2 cups of seafood salad. Serve.
