Number of Servings: 6

Ingredients

    1 1/2 pounds (24oz) Salmon filet
    2 teaspoons Olive Oil
    4 teaspoons Thyme, fresh, minced
    2 teaspoons Orange Zest
    1/2 teaspoon Salt
    1/2 teaspoon Pepper
    1-2 cloves Garlic

Directions

1. Preheat oven to 425

2. Pesto:
Combine oil, thyme, orange zest, seasonings and garlic together in small bowl

3. Fish prep:
Rinse salmon, inspect for bones, pat dry with paper towels.
-Place in glass pyrex baking dish large, with SKIN SIDE DOWN. *do not spray dish first!

4. Rub the pesto into the top of the fish and allow to sit at room temp ~ 20min. before serving time.

5. Bake fish about 20 min. Test by pulling meat of fish near the tail up with fork. Fish is done when flakes easily. *thickest part may not be cooked through, but will cook more during carryover cooking (standing)

6. Serve & Enjoy!
- Serve from the baking dish , OR
- gently lift meat of fish away from skin which should remain stuck to the pyrex dish
